Ingredients
- 1 ripe cantaloupe melon, deseeded, peeled and cut into bite-sized pieces
- 3 mini cucumbers (or 1 large cucumber, seeded), thinly sliced
- 1 generous handful fresh mint leaves, chopped (about 3 tablespoons)
- zest and juice of 1 lime
- 2 tablespoons extra-virgin olive oil
- flaky or coarse sea salt, to taste
- freshly ground black pepper, to taste
- 100 g feta, crumbled
- 1 pinch sumac or pul biber (Turkish red pepper flakes)
- 1 handful toasted pistachios, coarsely chopped
Instructions
- Place the cantaloupe and cucumber in a large serving bowl.
- In a small bowl, whisk together the lime zest, lime juice, olive oil, a pinch of sea salt and a few grinds of black pepper until combined.
- Pour the dressing over the melon and cucumber. Add the chopped mint and gently toss until everything is evenly coated.
- If using, scatter over the feta, pistachios and a pinch of sumac or Pul Biber. Finish with a little extra flaky sea salt and freshly ground black pepper, then serve immediately with lime wedges, if desired.
